For the Beef
- 1 lb ground-beef
- ½ tsp smoked-paprika
- 1 tsp chili-powder
- ½ tsp ground-cumin
- freshly ground black-pepper
- kosher-salt

- 2 can cooked white-rice
- 2 tbsp finely chopped cilantro
- 1 tbsp lime-juice
For Quesarito
- 1 can nacho-cheese sauce
- 8 large flour-tortillas
- ½ can sour-cream
- 1½ can shredded cheddar
Instructions
- Cook beef: Heat a medium-skillet over medium-high heat then add beef, chili-powder, paprika and cumin. Season with pepper and salt and cook until beef is no-longer-pink for 6minutes. Drain fat.
- Make cilantro-lime-rice: In a medium-bowl, toss together white-rice, lime-juice & cilantro by means of a fork. Put aside.
- Make quesadillas: Heat a large skillet over medium-high warmth. After the pan is hot, add a tortilla & sprinkle cheddar-cheese all around. Top with another flour-tortilla & cook until the cheese has melted for a couple minutes each side. Repeat with remaining tortillas & cheddar to make 4 quesadillas.
