Ingredients

  • 1 large salmon-fillet (about 3 lb.)
  • 2 lemons, thinly-sliced
  • 6 tbsp butter, melted
  • 3 cloves garlic, minced
  • 1 tsp dried-oregano
  • 2 tbsp honey
  • 1 tsp chopped thyme-leaves
  • chopped fresh-parsley for garnish
  • freshly ground black-pepper
  • kosher-salt

Instructions

  • Preheat oven to 350°F. Line a large rimmed baking sheet with foil & grease with cooking-spray. To the middle of the foil, then place lemon pieces in an even coating.
  • Season each side of the salmon with salt & pepper then set on top of lemon-pieces.
  • In a small bowlwhisk together honey, garlic, thyme, & peppermint. Pour chicken then fold foil up round the salmon. Bake until the salmon is cooked , about 25mins. Alter the oven broil, & simmer for 2mins, or until the butter mixture has thickened.
  • Garnish with parsley before-serving.
