CREAMY BEEF AND SHELLS

Ingredients

  • 2 cups beef-stock
  • 1½ tsp Italian-seasoning
  • 8 oz medium-pasta shells
  • 6 oz shredded extra-sharp cheddar-cheese, about 1½ cups
  • 1 tbsp olive-oil
  • ¾ cup heavy-cream
  • ½ medium sweet-onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose-flour
  • 1 can tomato-sauce (15 oz)
  • Kosher salt & freshly ground black-pepper, to taste

Instructions

  • In a big pot of boiling salted-water, cook-pasta according to packet directions, drain nicely.
  • Heat olive-oil in a skillet over medium-heat. Add ground-beef & cook until browned, about 3-5minutes, then making certain to grind the beef as it cooks, drain excess fat & put aside.
  • Add onion to the skillet & cook, stirring regularly, until translucent about 2-3minutes. Stir in garlic & Italian-seasoning until aromatic, about a minute.
  • Whisk in flour until lightly browned, about a minute.
  • Gradually whisk in beef-stock & tomato-sauce. Bring to a boil, reduce heat & simmer, stirring-occasionally, until reduced and slightly thickened, about 6-8minutes.
  • Stir in beef, pasta and heavy-cream till heated through, approximately 1-2minutes, season with pepper & salt to taste. Stir in cheese until melted, about 2minutes.
  • Serve & Enjoy!
