Marry Me Chicken
Ingredients
- 3-4 large chicken-breasts
- 1 tsp red-pepper flakes (may add only 1/2 teaspoon for less spice)
- ½ cup sundried-tomatoes (chopped)
- ¾ cup chicken broth
- 1 tbsp olive-oil
- 2 cloves garlic (minced)
- 1 tsp thyme
- ½ cup heavy-cream
- ½ cup freshly grated parmesan-cheese
- fresh basil
- salt and pepper, to taste
Instructions
- Preheat oven to 375°F. In a sizable oven-safe skillet heat-oil on medium-high heat. Season chicken generously with salt & pepper and sear until golden, about 4-5 mins each side. Transfer chicken to a plate.
- Add garlic & cook for a minute. Stir in thyme, red-pepper flakes, chicken broth & heavy-cream. Cook for 5 mins, stirring frequently. Stir in sundried tomatoes & parmesan-cheese.
- Return chicken to skillet & spoon-sauce throughout the chicken-breasts. Bake until chicken is cooked through about 15-18 mins. Garnish with basil & grated parmesan-cheese, if so wanted.
