CREAMY BEEF AND SHELLS
Ingredients
- 2 cups beef-stock
- 1½ tsp Italian-seasoning
- 8 oz medium-pasta shells
- 6 oz shredded extra-sharp cheddar-cheese, about 1½ cups
- 1 tbsp olive-oil
- ¾ cup heavy-cream
- ½ medium sweet-onion, diced
- 2 cloves garlic, minced
- 2 tbsp all-purpose-flour
- 1 can tomato-sauce (15 oz)
- Kosher salt & freshly ground black-pepper, to taste
Instructions
- In a big pot of boiling salted-water, cook-pasta according to packet directions, drain nicely.
- Heat olive-oil in a skillet over medium-heat. Add ground-beef & cook until browned, about 3-5minutes, then making certain to grind the beef as it cooks, drain excess fat & put aside.
- Add onion to the skillet & cook, stirring regularly, until translucent about 2-3minutes. Stir in garlic & Italian-seasoning until aromatic, about a minute.
- Whisk in flour until lightly browned, about a minute.
- Gradually whisk in beef-stock & tomato-sauce. Bring to a boil, reduce heat & simmer, stirring-occasionally, until reduced and slightly thickened, about 6-8minutes.
- Stir in beef, pasta and heavy-cream till heated through, approximately 1-2minutes, season with pepper & salt to taste. Stir in cheese until melted, about 2minutes.
- Serve & Enjoy!
