Ingredients
1largesalmon-fillet (about 3 lb.)
2lemons, thinly-sliced
6tbspbutter, melted
3clovesgarlic, minced
1tspdried-oregano
2tbsphoney
1tspchopped thyme-leaves
chopped fresh-parsley for garnish
freshly ground black-pepper
kosher-salt
Instructions
Preheat oven to 350°F. Line a large rimmed baking sheet with foil & grease with cooking-spray. To the middle of the foil, then place lemon pieces in an even coating.
Season each side of the salmon with salt & pepper then set on top of lemon-pieces.
In a small bowlwhisk together honey, garlic, thyme, & peppermint. Pour chicken then fold foil up round the salmon. Bake until the salmon is cooked , about 25mins. Alter the oven broil, & simmer for 2mins, or until the butter mixture has thickened.
