  • 3-4 large chicken-breasts
  • 1 tsp red-pepper flakes (may add only 1/2 teaspoon for less spice)
  • ½ cup sundried-tomatoes (chopped)
  • ¾ cup chicken broth
  • 1 tbsp olive-oil
  • 2 cloves garlic (minced)
  • 1 tsp thyme
  • ½ cup heavy-cream
  • ½ cup freshly grated parmesan-cheese
  • fresh basil
  • salt and pepper, to taste

Instructions

  • Preheat oven to 375°F. In a sizable oven-safe skillet heat-oil on medium-high heat. Season chicken generously with salt & pepper and sear until golden, about 4-5 mins each side. Transfer chicken to a plate.
  • Add garlic & cook for a minute. Stir in thyme, red-pepper flakes, chicken broth & heavy-cream. Cook for 5 mins, stirring frequently. Stir in sundried tomatoes & parmesan-cheese.
  • Return chicken to skillet & spoon-sauce throughout the chicken-breasts. Bake until chicken is cooked through about 15-18 mins. Garnish with basil & grated parmesan-cheese, if so wanted.
