Ingredients
3-4largechicken-breasts
1tspred-pepper flakes (may add only 1/2 teaspoon for less spice)
½cupsundried-tomatoes (chopped)
¾cupchicken broth
1tbspolive-oil
2cloves garlic (minced)
1tspthyme
½cupheavy-cream
½cupfreshly grated parmesan-cheese
fresh basil
salt and pepper, to taste
Instructions
Preheat oven to 375°F. In a sizable oven-safe skillet heat-oil on medium-high heat. Season chicken generously with salt & pepper and sear until golden, about 4-5 mins each side. Transfer chicken to a plate.
Add garlic & cook for a minute. Stir in thyme, red-pepper flakes, chicken broth & heavy-cream. Cook for 5 mins, stirring frequently. Stir in sundried tomatoes & parmesan-cheese.
Return chicken to skillet & spoon-sauce throughout the chicken-breasts. Bake until chicken is cooked through about 15-18 mins. Garnish with basil & grated parmesan-cheese, if so wanted.
