ONE-POT VEGETARIAN SPAGHETTI

This is Vegetarian spaghetti qucik and easy to make, very healthy one-pot pasta dinner!

Ingredients

  • ½ medium yellow-onion, chopped
  • 8 oz package-button mushrooms, sliced
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp black-pepper
  • ¼ tsp red-pepper flakes (optional)
  • 2 cups low-sodium vegetable-broth
  • 1 can fire-roasted diced tomatoes
  • 10 oz thin spaghetti-noodles (I use whole wheat)
  • 3 cups fresh-spinach or baby-spinach
  • ¼ cup grated Parmesan-cheese, plus extra for serving
  • 2 tsp extra-virgin olive-oil

For Serving

  • ¼ cup fresh chopped basil or parsley (optional)

Instructions

  • Heat olive-oil in a medium-pot over moderate heat. Add mushrooms & onion and simmer for 5-7 mins, until tender and the liquid from the mushrooms was largely cooked.
  • Insert garlic and season with pepper, salt and red-pepper flakes (if using) and simmer another 30 secs.
  • Increase heat to high then include canned tomatoes & vegetable broth. Bring to a boil.
  • Add spaghetti-noodles & stir until they wilt and fit in the pot. Cover the pot and reduce heat to cook & simmer for 5 mins. (Your liquid ought to be in a very low boil this entire moment.)
  • Remove lid & put in fresh-spinach, a couple handfuls at a time, stirring to acquire the lettuce blended in and simmer.
  • Remove from heat and Allow spaghetti sit, covered, for a Couple of Minutes
  • Stir in Parmesan-cheese, taste and correct seasonings.
  • Serve with fresh-basil or parsley and additional Parmesan-cheese, if needed.

Notes

  • It's possible to substitute cremini or portobello-mushrooms to the normal button mushrooms should you would like. And you'll be able to add some additional veggies you have available: peppers, zucchini & broccoli could be good. Add them together with the mushrooms and onions and saute everything together until it is slightly tender.
  • Some Parmesan-cheese might not be regarded as only vegetarian (see the article above for details), which means that you may substitute an Italian-style difficult cheese . If you would like to earn this recipe dish, simply substitute organic yeast or your own favourite vegan-cheese instead of the Parmesan.
  • Or if you are not vegan or vegetarian, then you can stir in certain cooked, shredded chicken or rotisserie chicken using the lettuce in the end to warm it through and create a hearty meal.
  • You might also stir in 1-2 cups of mozzarella-cheese if you would like a super-cheesy pasta.
