In a big pot of boiling salted-water, cook-pasta according to packet directions, drain nicely.
Heat olive-oil in a skillet over medium-heat. Add ground-beef & cook until browned, about 3-5minutes, then making certain to grind the beef as it cooks, drain excess fat & put aside.
Add onion to the skillet & cook, stirring regularly, until translucent about 2-3minutes. Stir in garlic & Italian-seasoning until aromatic, about a minute.
Whisk in flour until lightly browned, about a minute.
Gradually whisk in beef-stock & tomato-sauce. Bring to a boil, reduce heat & simmer, stirring-occasionally, until reduced and slightly thickened, about 6-8minutes.
Stir in beef, pasta and heavy-cream till heated through, approximately 1-2minutes, season with pepper & salt to taste. Stir in cheese until melted, about 2minutes.
