At a cast iron skillet, warm the olive oil on medium-high heat.
Add the ground turkey and garlic. Work with a wooden spoon to divide the turkey as it cooks. Stir frequently, and cook for approximately 5mins.
Add the onions and yellow peppers, and cook until the onions are tender.
Bring the sweet potato, red chili peppers, salt, and pepper.
Cover the skilletand cook until the sweet potatoes are tender. Do not forget to wake periodically. If needed, add more coconut oil or only a tiny water to cook the sweet potatoes faster.
As the sweet potatoes are cooking, preheat the oven into 400ºF.
Once the sweet potatoes are tender, then add the shredded mozzarella cheeseand place the skillet from the oven to melt the cheese.
After the cheese melts, then remove from the ovenand garnish with parsley.
