Cajun Cauliflower Rice

A wholesome keto dinner recipe that's unbelievably simple to make! This super fast, simple and tasty keto meal is created with only a small number of ingredients: sausage, frozen cauliflower, rice, onion, bell pepper, cajun seasoning and olive oil.

Ingredients

  • 2 10 oz bags frozen cauliflower rice about 6 cups
  • 1 13 oz package of cajun style andouille sausage sliced
  • 1 tbsp cajun seasoning
  • 1 small yellow onion diced
  • 1 large bell pepper diced
  • salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • Heat 2 tablespoon of olive-oil into a skillet over moderate heat and sauté the onion and diced bell pepper with the oil for a couple of minutes, or till they start to soften.
  • Stir in the sliced sausage and cooking for 3-4 minutes or till the sausage begins to brown.
  • Then add the frozen cauliflower-rice (uncooked) and cajun seasoning into the pan, stir and cooking for 5 minutes or till the cauliflower-rice gets heated through.
  • Do a taste test to find out whether you want more cajun seasoning and you can also like a little pepper, salt or garlic powder.
