Simple to make with just four ingredients, along with the recipe can be customized for whatever frozen or leftover veggies you have on hand.

Ingredients

  • 1 egg
  • 4 oz cheddar-cheese, shredded (about 1 cup)
  • 1 cup cooked-quinoa, cooled
  • ½ tsp kosher-salt
  • 1 cup vegetables, chopped and cooked

Instructions

  • Preheat oven to 350°F. Spray a mini-muffin-tin with cooking-spray or oil.
  • Add all ingredients into a bowl and blend till thoroughly blended.
  • Divide the mixture evenly between the cups of this mini-muffin-tin, then press-down to package it firmly.
  • Bake for 15-20minutes or till golden-brown & crispy.
  • In case you don't complete them, you can keep leftovers in the fridge.
