In a small saucepan, cook rice according to this package's instructions.
Put a large cast iron skillet over medium-high. When the skillet is hot, add the oil. Following the oil shimmers, add the sausage & cook until browned on each side, about 5minutes. Remove from the pan & put aside.
Add the onion and peppers, saute for 4-5minutes. Add the salt, garlic, and pepper then cook until aromatic about one minute. Remove from the pan & put aside from the sausage.
Add the tomato-paste & around ¾ cup of chicken broth, then whisk to blend. Permit the mixture to simmer for one minute, then add the paprika & cayene.
Stir in the cooked sausage, rice, remaining chicken broth, onions and pepper until blended. Garnish with chopped parsley, serve immediately.
