Cut each breast half & pound to approximately 1/2" thick.
Beat water & egg in a shallow bowl until combined.
Add garlic, pepper & salt and whisk to combine.
Put parmesan in another shallow bowl.
Dip each piece of chicken in egg mixture making sure to coat.
Permit extra egg to drip off.
Put in parmesan. Sprinkle more parmesan on the top. Gently press, then flip and repeat on other side. Repeat with remaining chicken.
Put oil and butter in a skillet over high heat.
Place chicken and don't proceed until edges-brown (in order that cheese sticks to chicken about 3minutes).
Gently press spatula then turn again and do not proceed until browned.
Gently press spatula and remove to serving plate.
