Ingredients

  • 4 thin boneless skinless chicken breasts
  • ½ cup minced red bell pepper
  • ¼ cup chopped cilantro
  • 1 cup diced avocado
  • 2 tsp chili powder
  • juice of 1 lime
  • 1 cup diced mango
  • 2 tsp olive oil
  • salt to taste

Instructions

  • Heat a grill over medium-high-heat. Then drizzle the olive-oil over the chicken-breasts & sprinkle with the chili-powder and salt to taste.
  • Then grill for 4-5minutes on each side or till cooked through. While the chicken is cooking, combine the avocado, mango, cilantro and red bell pepper in a bowl. Stir in the lime-juice & salt to taste.
  • Serve and enjoy! Spoon the salsa over the chicken.
