Ingredients

  • 8 tbsp unsalted butter
  • 6 cloves garlic
  • ½ cup olive-oil
  • 2 tsp Italian-seasoning
  • 1 tsp garlic-powder
  • ½ tsp kosher-salt
  • 16 oz refrigerated homestyle biscuit dough
  • 2 oz low-moisture mozzarella-cheese, shredded (about 1/2 cup), optional
  • 2 oz Parmesan-cheese, grated (about 1/2 cup), optional

Instructions

  • Arrange a rack in the center of the oven & heat the oven to 400°F.
  • Peel and mince 6 cloves garlic. Melt 8 tbsp unsalted butter over moderate heat in a small sauce-pan. Add the garlic, 1/2 cup olive-oil, 2 tsp Italian-seasoning, 1 tsp garlic-powder and also 1/2 tsp kosher-salt & stir to blend. Then remove from heat.
  • Unwrap 16-oz biscuit dough. Use kitchen shears to cut each biscuit into quarters. Roll each slice into a tight ball.
  • Pour 1/2 cup of this garlic-butter mix to 9x13" baking pan, then brush the butter at the bottom & up the sides of the pan. Insert the dough-balls and organize to tight rows. Pour the rest of the butter evenly over the dough-balls.
  • Bake the bubble-bread until starting to brown, 20-22minutes. Meanwhile, shred 2-oz mozzarella-cheese & 2-oz Parmesan-cheese.
  • Remove the pan from the oven and sprinkle with the mozzarella & Parmesan. Return the pan to the oven and bake until the cheese is melted and just starting to brown, about 5minutes longer.

Notes

  • Make ahead: Bake the garlic as directed with no cheese. Then just before serving, sprinkle the cheese over the bread and inhale for 5 minutes until the cheese is melted and beginning to brown.
