Farfalle Pasta with Spinach, Mushrooms, and Caramelized Onions

Ingredients

Caramelized Onions

  • 3 large yellow-onions, sliced
  • 1 tbsp balsamic-vinegar
  • 1 tbsp olive-oil
  • ¼ tsp salt

Creamy Pasta Sauce

  • 1 cup parmesan-cheese, shredded
  • 6 oz spinach
  • 10 oz mushrooms, sliced
  • 1 tbsp olive-oil
  • 1 cup half-and-half
  • ¼ tsp salt

Pasta

  • 8 oz farfalle-pasta

Instructions

How to caramelize onions:

  • Heat 1 tbsp olive-oil medium-high heat in a large skillet. Add chopped onions & cook on high-heat for approximately 10 mins, constantly stirring with the spatula.
  • The onions should begin to brown, but without burning.
  • Reduce heat to medium & continue cooking onions for 10 mins, continuing to stir, as onions-brown much more without burning. At this stage add a pinch of salt.
  • Continue cooking for 10 mins on medium or low-heat, stirring occasionally to make certain onions do not stick to the base of the pan or burnoff.
  • In general, you need to consume cooked onions for 30 mins.
  • Remove the skillet from heat & sprinkle onions with a little amount of balsamic-vinegar to deglaze the pan.
  • With a spatula, stir the onions, then scratching the base of the pan and then coat onions with a pinch of balsamic-vinegar that you added. Remove onions to a plate.

How to cook mushrooms and spinach:

  • Heat 1 tbsp olive-oil at exactly the exact same skillet on medium heat. Add chopped mushrooms. Sprinkle with a pinch of salt.
  • Cook mushrooms for approximately 5 mins, sometimes stirring, until mushrooms are tender.
  • Add fresh-spinach into the skillet & stir fry on low-heat just until spinach begins to wilt.

How to make creamy pasta sauce:

  • Insert half-and-half into the spinach & mushroom mix and bring to a fast boil. Instantly reduce to simmer.
  • Insert 2/3 cup of parmesan-cheese & 1/4 tsp salt. Keep stirring while the sauce simmers till the cheese melts.
  • Add caramelized onions back into the skillet with the pasta-sauce.

Cook Pasta:

  • Cook pasta according to package directions. Drain.
  • Add drained & cooked farfalle-pasta into the sauce that is creamy. Stir on low heat for a few minutes.
  • If the sauce is too thick, add a little quantity of half-and-half to lean it out. When it's too thin, add a small number of shredded Parmesan-cheese, and then stir it , whereas the sauce simmers.
  • Serve with more shredded parmesan-cheese sprinkled on top.
